Banana Pancakes

3 large eggs
1 cup flour
1 cup flour
3 tsp. baking powder
1/2 cup milk
2 tbl. vegetable oil
2 bananas, ripe and mashed
1 banana, slice
In a mixing bowl, using a hand or electric mixer, beat the eggs for 2 minutes until frothy. Add flour, baking powder, milk and oil. Stir in banana.
On a hot griddle, pour 1/4 cup batter for each pancake. Cook until the edges are dry, about 2 minutes per side.
Top with banana slices and pecans if you wish.
