1 6-ounce package stove-top stuffing mix
4-5 cornish hens
salt and pepper to taste
Sauce:
1 10-ounce jar red currant jelly
1/2 cup golden raisins
1/4 cup butter or margarine
2 teaspoons lemon juice
1/4 teaspoon allspice
Mix stuffing according to package directions and stuff hens. Sprinkle with salt and pepper. Place trivet in slow cooker/Crock Pot. For a 3-1/2 quart pot, place hens on end, neck end down. In saucepan combine jelly, raisins, butter, lemon juice and all spice. Cook on low heat, stirring, until blended. Brush some of the sauce on hens in the pot. Brush hens once during cooking, if possible. Cover slow cooker/Crock Pot and cook on low for 5-7 hours. Spoon remaining sauce over hens at serving time.
