4 pork chops -- about 1-1/4"
1 tsp grated lemon rind
4 cloves minced garlic
1/4 cup grated ginger root
1 tbl chili powder
1/2 tsp ground coriander
1/2 tsp black pepper
1/2 tsp red chiles, crushed
3 tbsp water
Place all ingredients except pork chops in a blender container; blend until smooth and spread about 2 teaspoons of paste on each chop, covering both sides. Cover chops and refrigerate for 2 to 24 hours. Prepare medium-hot grill in kettle-style covered grill. Grill chops directly over coals for 7 to 8 minutes per side. Serve immediately.
