Spinach Cheese Casserole

One 16 oz. package frozen chopped spinach, thawed
1 can cream of celery soup
1/2 cup mayonnaise
1 tsp. horseradish or horseradish mustard
1 tsp. Splenda
3 tbsp. red wine vinegar
3 eggs, beaten
1-1/2 cups grated Cheddar cheese
Salt/Pepper to taste
Vegetable Cooking Spray
Preheat oven to 350 degrees.
In a large bowl, mix frozen chopped spinach, cream of celery soup and mayonnaise. Add horseradish, Splenda, wine vinegar, eggs and cheese. Mix well. Season with salt and pepper.
Spray a 9 x9 or 11 x 7 casserole dish with cooking spray. Pour mixture into prepared pan. Bake for 1 hour.
Makes 10 (1/2 cup) servings @. 3.3 carbs per serving
