I Can't Believe it's Not Spaghetti

1 cup cooked cauliflower
6 oz. Italian sausage
1/2 cup spaghetti sauce
Parsley, salt & pepper
Boil Cauliflower for a few minutes until it just gets tender. Drain and use fork to seperate cauliflower until it has the consistency of rice. Do not mash.
Fry and slice the sausage until brown. Add 1/2 Cup Spaghetti sauce and simmer. Pour sausage and sauce over cauliflower. Season to taste with fresh parsley, salt and pepper.
Number of Servings: 2
Carbs per serving about 7 (Depends on Spaghetti Sauce carb count)
