2/3 cup whey Protein isolate -- vanilla
2/3 cup Soy flour
2/3 cup Atkins bake mix
2/3 cup flax seeds -- meal
2/3 cup wheat bran
8 tbsp sour cream
1 tsp baking powder
1 cup Splenda
4 eggs
2 egg whites
1/3 cup Peanut Oil
1/4 cup seltzer water -- or spring
Real cream
Choose One flavor below and add to the mix, or design your own: Banana walnut - Add 1 cup ground walnuts, and 1 banana if you can spare the Carbs or 1 teaspoon banana extract blueberry/strawberry - Add 1 cup nuts walnuts, pecans, macadamias and 1 cup blueberries/strawberries
Bake at 350°F-175°C for 25 minutes in either muffin pans or 2 bread pans. Fill the tins up to the brim. Store in the freezer or refrigerator.
Chop up about 2 muffins, pour on some cream dilute with water if you can't spare the extra carbs, and heat in the microwave for about 3 minutes.
