Ham, & Cheese Scrambled Eggs

Serving Size: 2

3 eggs at room temperature
2 tablespoons onion, chopped
2 cloves garlic, chopped
1/4 teaspoon chili powder
1/2 teaspoon tabasco sauce
2 tablespoons fresh parsley, chopped fine
2 ounces ham, cubed
1 ounce cheddar cheese, grated
salt and pepper to taste
1-1/2 tablespoons butter

Put eggs in a bowl and add 2 tablespoons of water. Stir vigorously with a fork or whisk. Add Chli powder and Tabasco and stir until mixed. Set aside. Heat skillet and add 1 tablespoon oil; allow to heat. Add onion and saute for a few minutes, but do not brown. Add garlic and continue sauteeing 2 more minutes. Add ham & saute until warmed through. Add fresh parsley. Saute an additional minute. Add egg and allow to set some before stirring. Stir ocassionaly until set. Remove to a bowl or plate and cover with cheese. Set under broiler or in microwave until cheese melts.
