Ingredients
1 lb (454g) Salmon fillet
1 tbl ginger root, grated
3 lemon slices
3 tbl dry white wine
1 tbl lemon juice
Set oven to 375* (190C)
Place salmon fillet on 2 layers of aluminum foil, large enough to make a tent over the fish. Rub ginger into salmon, cover with slices of lemon. Sprinkle wine and lemon juice over the fish. Fold foil so that it makes a tent with the end sealed too.
Place on a baking sheet and bake at 375* (190C) for 20 minutes (or longer if fillet is thicker than 1 inch). carefully unfold the top of the foil. Transfer fish to serving platter. Pour cooking juices over fish and serve.
