Lowest Carb Cheesecake

3/4 lb cream cheese, whipped
1/2 cup splenda or 2 tbl liquid
2 large eggs
1 tsp almond extract
1 tsp vanilla cream
liquid splenda 1/2 tsp
A good squirt of fresh lemon juice
(OPTIONAL but recommended)
Combine cream cheese, eggs, liquid splenda and almond extract in a large bowl. Beat well. Pour into a well greased pan and bake at 350°F-180°C for 30 minutes. Remove from the oven and cool for 20 minutes.
Mix vanilla extract sour cream and splenda (don't forget the lemon juice if you like a tart topping) in a small bowl. Spread evenly over cake and bake an additional 10 minutes. Cool at room tempeture at least 1/2 hour then place in fridge overnight.
The entire recipe has about 20 grams of carbs. If you can't find liquid splenda try lowcarbtreats.com. Their prices aren't great but they've got it. (And yes Splenda granular does have carbs..24 grams per cup according to their website)
