Low Carb Vanilla Doughnuts

2 cup vanilla protein (shake mix like Atkins or ProFormix)
1 cup soy flour
2 tsp baking powder
1/2 cup Splenda
2 tsp Brown Sugar Twin
1/4 cup heavy cream
2 tsp sugarfree vanilla extract
3 eggs
1/4 cup oil **
Lots of oil for frying
Sift dry ingredients together (mixing really well!) and set aside. Whisk cream, vanilla, eggs and oil together in a separate bowl. Make a well in the dry ingredients and pour in the egg mixture. Start incorporating the dry ingredients, slowly, working them in from the sides gradually. When it gets stiff enough, start using your hands and knead it until you have a smooth mass. Roll out dough and cut into donut shapes. Fry in hot oil 1-2 minutes per side. Remove to paper towels and sprinkle with Splenda, or ice later with a low carb frosting (see other recipes in this section.) They can also be sprinkled with a cinnamon/Splenda mix if you like.
Makes approximately 40 donuts
2 carbs per donut
* Canadian Brown Sugar Twin tastes better than the American (saccharin) version.
** Sweet Almond Oil works great here for adding to the mix (not for frying in!)
