Ginger Loaf

Serving Size: 6

1 cup soy flour
1/2 cup heavy cream
2/3 tsp baking soda
2 eggs
1/4 cup seltzer water
2 tbl Splenda
1/2 tsp grated ginger
1/2 tsp nutmeg
1/2 tsp cinnamon
Butter to grease pan
*adjust spices to your tastes

Preheat oven to 375°F-190°C. Grease a small loaf pan and put aside. Combine all dry ingredients, set aside. Separate eggs, beat whites till fluffy. Recombine egg whites and yolks and add sweetener. Combine all ingredients and mix until dry ingredients are fully incorporated. Do not over mix, bread will not rise. Pour into pan and bake for approximately 25 min or until cake tester comes out clean.

Servings: 4-6 slices (medium size)
