Easy Coconut Bread Pudding

4 eggs - room temperature and well beaten
1/4 cup butter - room temperature
2/3 cup Splenda
1/4 teas salt
1 teas vanilla
1/2 teas baking powder
2 cups heavy cream
1 cup unsweetened coconut
1/2 cup Atkins bake mix or soy protein
Place all ingredients in a blender and blend.
Pour into a buttered 10 inch pie plate. Bake at 350 for 1 hour.
