Coffee Cake with Frosting

Cake:
1-1/2 cups atkins Bake Mix
1/2 cup almond meal
2 teaspoons baking powder
1/4 cup splenda
1 cup sour cream
1/4 cup cream
1 teaspoon vanilla extract
1 dash salt
1/2 teaspoon cinnamon
3 large eggs
Frosting:
3 ounces cream cheese
1/4 cup heavy cream
2 tablespoons sour cream
3 each splenda packets
1/2 teaspoon vanilla extract
Preheat oven to 350*. Spray a 9x9 square cake pan with cooking spray. Mix bake mix, almond meal, baking powder, splenda, cinnamon and salt. In another bowl, mix sour cream, cream, vanilla and eggs until
smooth. Stir quickly into dry ingredients until just blended (don't over blend). Pat into prepared pan lightly and evenly. Bake, covered with foil, for 20 minutes. Remove foil and bake an additional 20 minutes or
until nicely browned and tests done in the center. Let
cool.
Frosting:
Blend all ingredients until smooth. Frost cooled cake. If a glaze is desired, add 2-3 additional tablespoons of cream to thin frosting then
drizzle over warm cake.
