Serving Size: 12 at 5 grams carb.
3 tbl almond meal -- flour
2 egg, separated
2 tbl splenda -- to taste
1 tbl cocoa powder
1/2 tsp grated lemon rind
1/2 tsp ground cinnamon
6 drops vanilla extract -- (6 to 8)
Foam egg yolks with splenda dissolved in a few drops of water.
Beat egg whites until stiff.
Add almond flour, cocoa, lemon rind and cinnamon to yolks, stir smooth.
Fold in egg whites.
Drop from teaspoon on a buttered tin; flatten out, and bake in a moderate oven 350°F-180°C degrees F. 10-10-15 mins
