This is a Specialty Ingredient Recipe.
It requires pre-packaged items as outlined below.
• To order DiabetiSweet (an Isomalt/Ace-K mix), go to Diabetic Promotions. (Many pharmacies now carry Diabetisweet with other
diabetic supplies.)
• Keto Sweet, Ket-OJ, and La Tortilla Factory tortillas are
available from Low Carb Outfitters, and The Low Carb Connoisseur.
• Estee Blueberry Syrup is available from 1-Stop Sugarless Shop.
• Steel's Nature Sweet Powdered Sugar Substitute is also
available from 1-Stop Sugarless Shop.
Ingredients:
3 Tablespoons DiabetiSweet or Keto Sweet
1-1/2 teaspoons cornstarch
1/2 cup pre-made Ket-OJ or other carbfree orange juice drink **
1/2 cup Estee Blueberry Splenda-Sweetened Syrup
1-1/2 cups frozen or fresh blueberries, divided
1 package (8 ounces) cream cheese, softened
1/4 cup Powdered Sugar Substitute or Splenda granulated
1 teaspoon vanilla extract
8 low-carb La Tortilla Factory tortillas ***
2 Tablespoons butter
Prepare sauce; in a small saucepan combine DiabetiSweet and cornstarch; stir in orange juice substitute. Cook and stir over medium heat until sauce is clear and thickened, about 5 minutes; stir in 1 cup blueberries and 1/2 cup Estee Blueberry Splenda-Sweetened Syrup. Return to a boil; boil and stir for 1 minute.
In a mixing bowl, beat cream cheese until light. Add Powdered Sugar Substitute or Splenda and vanilla; beat until smooth and creamy. Spread each tortilla with about 2 tablespoons of the cheese mixture. Place about 6 frozen blueberries across the center of each tortilla. Roll jelly-roll style. In a medium skillet, melt 1 tablespoon butter over medium heat; place tortillas - one at a time - seam side down in skillet and cook turning occasionally until evenly browned, about 3 minutes. Halfway through, repeat with remaining butter and tortillas. Serve topped with hot blueberry sauce.
Serves 8 - 8 grams per serving.
NOTES:
* To reduce the carbs to 6.5 carbs per wrap, substitute not/Starch instead of cornstarch -- You can order it online from Low Carb Outfitters, Carb Smart, or The Low Carb Connoisseur. Another alternative is guar or xanthan gum (see merchants above.)
** Don't use an Orange Drink sweetened with aspartame. You need to boil the sauce and aspartame is not heat stable. You may use a substitute of 1/2 cup water sweetened with heat-stable artificial sweetener of your choice and 2 drops of orange oil.
*** If you prefer, you may substitute low-carb crepes made with your favorite recipe or mix for the tortillas. It makes a lighter and even prettier dessert, but is more work. Adjust carbs accordingly.
