3/4 cup whey protein Isolate -- vanilla
2 tbl egg whites
1 tbl baking powder
1 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp nutmeg
1 dash mace
1 dash ginger
2/3 cup Splenda
1 dash salt
1 can pumpkin (12 ounce)
1/4 cup heavy cream
3 lg eggs
2 tbl water
3 tbl olive oil
Preheat oven to 375°F-190°C. Oil a Pyrex loaf pan* and set aside.
Mix all dry ingredients in a small bowl.
Mix all liquid ingredients (including pumpkin) in large bowl; then add dry ingredients and mix with hand mixer for one minute.
Pour into loaf pan and bake for 1 hour and 20 minutes; *
or use an 8x8" 200x200mm Pyrex square baking dish and bake for 50-55 minutes. (Heating times vary so test with a toothpick for doneness.)
Allow to cool thoroughly before slicing.
