1/2 cup cream
1/4 cup Pizza Quick sauce
4 eggs
1/4 cup soy protein isolate
1 cup diced pepperoni
1 can mushroom stems and pieces -- (7 ounce)
1/8 cup diced onion
1/2 cup mozzarella cheese
2 tbl Parmesan cheese
foil muffin liners or non-stick spray
Place the pepperoni on a double layer of paper towels and microwave for 1 minute. Blot the excess fat accumulated on the top of the pepperoni pieces with a paper towel, the repeat the process until the excess fat is gone but the pepperoni is still soft. (Do not let it dry out.) Dice the pepperoni and set aside.
Beat the cream, pizza sauce, eggs, and soy protein isolate together, then stir in the pepperoni, mushrooms, onion, mozzarella, and Parmesan.
Spray muffin tins or line with foil muffin liners. Scoop the batter into the muffin tins, filling each 2/3 full.
Bake at 350°F-180°C for 20-25 minutes.
