Lemon Poppy Seed Muffins

1 cup atkins bake mix
2 large eggs
1/2 cup heavy cream
1/4 cup water
2 teaspoons baking powder
1 package lemon jello gelatin
1 tablespoon poppy seeds
2 teaspoons lemon juice
1 package sweetener
Preheat oven to 375* and spray a muffin tin with
cooking spray. Mix dry ingredients. Beat eggs lightly. Dissolve gelatin in water, then mix everything together. Spoon evenly into tin (makes 10-12 regular sized muffins) and bake for 25 minutes or until nicely
browned and they pull away from the sides of the tin.
