Cinnamon Pancakes

3/4 cup Atkins Protein Baking Mix
2 eggs
2 egg whites
1 tsp vanilla extract
18 packest of equal (you can use more or less but I like it on the sweeter side)
3 tbl cinnamon (again more or less depending on your taste buds)
3 tbl sour cream
2 tbl olive oil (in pan) (pam is also an option)
Mix all dry ingredients; beat in eggs, egg whites and vanilla until mixed well. Beat in sour cream.
Place pan over heat and add oil. Pour or drop mixture into pan, after 3 or 4 minutes on medium heat, flip your pancakes and smell the sweet cinnamon.
Atkins also makes a no-carb, no calorie syrup.
The whole recipe only has 6 or 7 carbs!!!
