Chocolate Fudge Muffins

1/3 cup almond meal -- flour
1/3 cup Atkins bake mix
1/8 cup flax seeds -- crush to meal
1/3 cup splenda
1 tbl brown sugar twin
1/2 pack cream cheese
1 tbl cocoa powder
1 square unsweetened baking chocolate
1 tbl butter
1 tsp vanilla extract
2 eggs
nuts, chopped (optional)
Heat cream cheese in micro for 1 minute. In a separate dish, melt chocolate and butter. Add melted chocolate to cream cheese, add eggs and vanilla. Mix well until smooth. Add all other ingredients. Mixture should be thick, but if too thick,just add a little water. Bake at 350°F-180°C for 20-25 minutes.
Makes 6 muffins, at 4.5 carbs each.
