2 eggs, beaten
3/4 cup water
2 tablespoons oil
1 teaspoon chocolate extract
1 teaspoon coconut extract
1/8 cup flax seeds -- ground to 1/4 cup meal
1/4 cup Splenda
1 cup Carbolite Chocolate Zero Carb Bake Mix
1/4 cup unsweetened coconut meat
2 teaspoons baking powder
Mix together wet ingredients. Mix together dry ingredients. Put dry
ingredients into wet and stir. Spray muffin tin with Pam, preheat oven
to 350. Bake 20 mins, do not overbake. Makes 6 large muffins.
NOTES : Counts for chocolate and coconut extracts not included in
totals.
