Pineapple Coconut Granitas

The recipe for this easy frozen dessert can be doubled or tripled as needed. Just make sure that the depth of the mixture is no more than 1/4-inch or it will not properly freeze.

1/2 pineapple, peeled and cored
1/2 cup sugar substitute
3/4 teaspoon coconut extract

In a food processor fitted with a steel blade purée the pineapple.
In a small saucepan bring 1 cup water and the sugar substitute to a boil. Add to the pineapple. Stir in the coconut extract.
Pour mixture into a 9” x 13” pan. Place in freezer, scraping with a fork to break up, every 30 minutes, about 3 hours.
