1-1/2 lbs pork loin cut into 1-inch cubes
2/3 cup vegetable oil
1/3 cup fresh lime juice
2 tbl cider vinegar
1-1/2 tbl thyme
1 tbl splenda
1 dash molasses
1 tbl ground allspice
1 tsp nutmeg
2 tsp black pepper
1-1/2 tsp salt
1 tsp cinnamon
1/2 tsp cayenne
1/4 tsp ground cloves
2/3 cup chopped onions
2 hot peppers, finely chopped
3 cloves garlic, minced
Place pork in a large self-sealing plastic bag. Combine oil, lime juice and vinegar; add sugar, seasonings, onion and garlic. Mix until blended. Pour over pork. Seal bag and marinate in the refrigerator 8-12 hours or overnight. Drain pork; discard marinade, and place meat in a single layer, not touching, in a shallow baking pan and roast at 350°F-180°C. for 25-30 minutes, until pork is tender. Remove to serving platter and serve hot as an appetizer.
