Pineapple Tomato Salsa

3/4 pound tomato, chopped
1/2 cup pineapple chunks, crushed
1/3 cup green onion, chopped
1/2 jalapeƱo, chopped
1-1/2 tbl. coriander
1-1/2 tbl. lemon juice
1 garlic clove, chopped
1/8 tsp. salt
1 tbl. oil
In a medium bowl, combine chopped tomatoes, crushed pineapple chunks, chopped green onions, chopped jalapeno, and coriander; set aside.
In a small bowl, combine lemon juice, chopped garlic clove, and salt; whisk in oil. Gently mix the dressing with the tomato mixture.
Makes 8 servings.
