Fresh Tomato Salsa

6 plum tomatoes, diced
1/2 cup diced yellow onion
1 jalapeƱo, seeded and diced
2 cloves garlic, peeled and minced
2 tbl. chopped fresh parsley
1 tbl. minced fresh cilantro
1 tsp. crushed dried oregano
2 tbl. olive oil
1 tbl. red wine vinegar
1/4 tsp. salt
1/8 tsp. ground black pepper
In a large bowl combine tomatoes, onions, jalapenos, garlic, parsley, cilantro, oregano, olive oil, red wine vinegar, salt and pepper. Mix well. Serve with corn chips, vegetable slices, tacos, flautist or any other favorite dish.
Makes 12 servings.
