Fire Grilled Pineapple Salsa

1 each pineapple, peeled, cored, sliced into rings
2 red bell peppers, finely diced
1 red onion, finely diced
2 poblano chile, very finely diced
3 Tbs. cilantro,
chopped juice of one lime
salt to taste
Fire up the grill!! Peel and core the pineapple. Cut it into 1/4 inch thick rings. Season each slice with a little sprinkle of fresh ground black pepper and a pinch of chile powder. Grill each slice on both sides until it begins to char. Remove from the grill and cool. Dice the rings into 1/4 inch pieces. Remove the stem and seeds from the bell peppers, fine dice along with the onion. Remove the seeds from the poblano chiles and dice as fine as you can. Be careful not to rub your eyes or anywhere else sensitive after doing this. Wash your hands!! Chop the cilantro and combine all of the ingredients. Salsa is best if it sits for about 4 hours. Serve and Enjoy!
