Corn and Black Bean Salsa

1 cup sweet corn, removed from cob
15 ounces black beans, drained
14-1/2 ounces diced tomatoes with green chiles (do not drain)
2 tbl. diced sweet red pepper
2 tbl. diced green pepper
1 clove garlic, minced
3 tsp. freshly squeezed lime juice
1/2 tsp. cumin
1/4 cup diced onion
1/4 tsp. dried cilantro
1/2 tsp. salt
1/2 cup chopped green onion
Place all ingredients, except the green onions, in a saucepan. Cover and simmer for 10 minutes. Place in a serving bowl and toss in the green onions. Serve hot or chilled
