3 cups flour
2 cups sugar
1 tsp.baking soda
1 tsp. salt
1 cup oil
1 tsp. butter flavoring
1 tsp. cinnamon
3 eggs
1/2 cup applesauce
8 ounces crushed pineapple
3 bananas, mashed
2/3 cup chopped pecans
1/2 cup coconut
Mix all ingredients except bananas and nuts, together by hand in a large bowl. Add mashed bananas, applesauce, and nuts and stir again by hand. Bake in greased and floured,large tube pan at 325 degrees for 1 hour and 5 minutes. Let cool 1 hour before removing from pan.
Frosting:
1 cup evaporated milk
1 cup sugar
3 beaten egg yolks
1 tsp. vanilla
1-1/3 cups flaked coconut
1 cup chopped macadamia nuts
Combine milk, sugar, egg yolks,butter, and vanilla in a saucepan. Cook on medium heat until thick, about 12 minutes. Stir constantly. Remove from heat, and add coconut and nuts.
When cooled and thickened, spread on the cake.
