1-1/2 cups sifted flour
1 cup white sugar
2 tsps. baking powder
1/2 tsp. salt
1 small container pineapple or pina colada yogurt
1/2 cup vegetable oil
2 eggs
Topping:
1 cup flaked coconut
1 tsp. cinnamon
1/3 cup brown sugar
Preheat oven to 350 degrees. Grease a 9 by 9 by 2 inch pan.
Combine flour, white sugar, baking powder, salt, yogurt, oil and eggs in a large bowl. Beat 70 or 80 strokes with a wooden spoon until well blended. Pour into greased pan.
Mix coconut,brown sugar, and cinnamon in a small bowl; sprinkle over batter.
Bake in the oven for 35 minutes or until center springs back when lightly touched.
