Sunny Orange Sponge Cake

10 medium egg yolks
1-2/3 cups sifted cake flour
1/2 tsp. salt
1 tsp. baking powder
1/2 cup hot orange juice
1/2 tsp. orange extract
2 tbl. grated orange rind
1 cup sugar
Have eggs at room temperature, very important.
Sift flour with salt and baking powder 3 times, add orange rind. With electric mixer at high speed, beat egg yolks until slightly thickened; gradually add hot orange juice, beating until very thick and light(about 10 minutes) Beat in Extract, then sugar, 1 tabls. at a time, beating constantly. With a rubber spatula or a spoon, fold in flour mixture, in fourths, just until blended. Turn into ungreased 10 inch tube pan.
Bake 40 minutes, or until done. Invert pan; leave until cold; then remove cake by loosening around the edges with a knife.
