1 cup raisins
1-1/2 cups water
1 egg
2 cups all-purpose flour
1 cup white sugar
1 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1 tsp. ground cloves
3 tsp. boiling water
1/2 tsp. vanilla extract
1/2 cup butter, melted
Heat oven to 325 dgree. Grease a 9 x 5 inch pan.
In A 3 quart saucepan, simmer raisins in water until there is 1 cup of water left, and the raisins are plump. Allow mixture to cool.
Cream the sugar and egg. Mix spices with boiling water and add to sugar and egg mixture. Toss the raisins with the flour and soda. Add vanilla, and melted butter. Blend well. Pour into loaf pan.
Bake for 40-45 minutes.
