It is thought that this cake originated around 1903, when Jim Dole invented canned pineapple. It used to be called Spider or Skillet cake because it used to be, and sometimes still is, baked in an iron skillet.
1/3 cup butter
1/2 cup brown sugar
8 slices pineapple
maraschino cherries
pecan halves
2 eggs
2/3 cup sugar
6 tbl. pineapple juice
1 tsp.vanilla
1 cup sifted flour
1/3 tsp. baking powder
1/4 tsp.salt
Melt butter in 10 inch baking dish. Sprinkle brown sugar evenly over the butter.
Arrange pineapple slices, center with cherries. Place Pecans between slices.
Beat eggs until thick and lemon colored. Add sugar gradually, then juice and Vanilla. Sift dry ingredients together and beat in all at once.
Pour batter into baking dish over Pineapple and bake at 350 for 45 Minutes.
