3 cups flour
2 cups sugar
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
3 eggs
3/4 cup vegetable oil
1/2 cup sour cream or yogurt
1 tsp vanilla
8 oz. crushed pineapple, partially drained
2 cups mashed banana
1/2 cup chopped nuts
1/2 cup coconut
In a large bowl combine flour, sugar, baking soda, salt,and cinnamon. Add eggs, oil. vanilla, pineapple, sour cream, banana,walnuts, and coconut. Blend well and pour into greased and floured 10 inch bundt pan. Bake 350 degrees for 65-75 minutes. Check by inserting a pick in the center of the cake, when it comes out clean, cake is done.
