Lemon-Ginger Cake

2 cups sugar
3/4 cup unsalted butter
4 large eggs
3 tbl. fresh lemon juice
1 tsp. grated lemon rind
1 tsp. vanilla
3 cups cake flour
1 tbl. ground ginger
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1-1/4 cups buttermilk
Beat butter and sugar in a large bowl til fluffy. Add eggs one at a time, beating well after each addition. Mix in lemon juice, peel, and vanilla.
Sift flour, ginger, cinnamon, baking powder, baking soda, and salt into medium bowl; add to butter mixture alternately with buttermilk in 3 additions, beginning with dry ingredients. Bake in two 9 inch,greased and floured, layer cake pans at 350 degrees for 35-40 minutes.
