In the Gay Nineties, Devil's Food Cake was the craze of Chicago, and it's popularity soon spread across the country. This recipe, made with cocoa, is an old favorite.
1-1/2 cups plus 2 tbl. sifted flour
1-1/2 cups sugar
1-1/4 tsp. soda
1 tsp. salt
1/2 cup cocoa
1/2 cup crisco shortening
1 cup milk
2 eggs, beaten
1 tsp. vanilla
Preheat oven to 350 degrees. Grease well and flour 2 round 8 inch cake pans.
Sift dry ingredients into bowl. Add shortening, milk,and vanilla. Beat 2 minutes at medium speed on mixer, or 300 vigorous strokes by hand. Scrape sides and bottom of bowl constantly. Add eggs, beat 2 more minutes, scraping bowl constantly.
Pour into prepared pans. Bake 30-35 minutes.
