Coconut Pineapple Cake

2 cups flour
1-1/2 cups sugar
2 tsp. baking soda
1 egg
1/2 tsp. salt
1/4 cup brown sugar
1/2 tsp. vanilla
1 (20) oz. can crushed pineapple with the juice
1 cup coconut
Preheat oven to 350 degrees. Grease and flour a 9 by 13 inch pan.
Combine all ingredients in a large bowl, beat until well combined.
Frosting:
2/3 cup sugar
1/2 cup butter
1/4 cup milk
3/4 cup coconut
Combine sugar, butter, and milk in a saucepan. Bring to a boil, and simmer for 2 minutes. Add coconut. Pour over still warm cake. Top with toasted coconut if desired
