Classic White Cake

4 large egg whites
1 cup milk
2-1/2 tsp. vanilla
3 cups sifted cake flour
4 tsp. baking powder
1-1/2 cups superfine sugar
3/4 tsp. salt
12 tbl. butter (1-1/2 sticks) Cut into cubes, and softened

Preheat oven to 350 degrees. Grease and flour two 9 inch cake pans. In a medium bowl combine the egg whites, 1/4 cup milk, and vanilla. Beat with a fork or whisk to combine. In a large mixing bowl combine the dry ingredients and mix on low speed to blend. Add the butter and remaining 3/4 cup milk.
Mix on low speed until the dry ingredients are moistened. Beat for 1 minute. Scrape down the mixture. Gradually add the egg, milk, vanilla in 3 batches, beating 30 seconds after each addition.
Pour batter into prepared pans. Bake 25-30 minutes, or until cake tests done in the center.
