Classic Coconut Cake

2 cups flour
1-1/2 cups sugar
3 tsp. baking powder
1 tsp. salt
1 cup milk
1/2 cup shortening
4 egg whites
1 tsp. vanilla
1 tsp. coconut flavoring
3/4 cup flaked coconut
Heat oven to 350 degrees: Bake for 35-40 minutes in a greased and floured 13 by 9 inch pan. Or in two 8 or 9 inch round cake pans for 30- 35 minutes.
Blend all ingredients, except egg whites, coconut flavoring ,and vanilla in a large mixing bowl at low speed until moistened. Beat 2 minutes at medium speed. Add egg whites, coconut flavoring and vanilla, beat 2 more minutes at medium speed. Add flaked coconut. Pour batter into prepared pans.
Frost with any white frosting with plenty of coconut added.
