3 eggs
1 cup oil
2 cups sugar
large can crushed pineapple (13 oz.)
2 cups shredded carrots
1 cup coconut
2 cups flour
2 tsps. soda
1 tsp. salt
2 tsps. cinnamon
1 tabls. vanilla
1/2 cup chopped nuts
Sift together dry ingredients in a large bowl. Mix together eggs, oil, sugar, pineapple, carrots, and coconut, combine with dry ingredients, and add vanilla and chopped nuts.
Bake in a 9 by 13 inch pan for approximately 60 minutes.
Frost with a cream cheese frosting
