Blueberry Gingerbread Cake

1/2 cup oil
1 cup sugar
1/2 tsp.salt
3 tbl. molasses
1 egg
2 cups flour
1/2 tsp. ginger
1 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. baking soda
1 cup fresh or frozen blueberries
1 cup buttermilk
2 tbl. sugar
Preheat oven to 350 degrees. Grease and flour 12 by 7 inch baking dish. On medium speed of an electric mixer, beat oil, sugar, salt, and molasses. Beat in egg. Combine flour, spices, and baking soda. Dredge blueberries with 2 tbl. of the mixture. Add remaining flour mixture to first mixture alternately with buttermilk, beating after each addition. Stir in blueberries.
Pour into prepared pan. Sprinkle top of batter with remaining 2 tbl. sugar. Bake for 35-40 minutes.
