Apricot Crumble Cake

1- 8 oz. pkg. cream cheese
1/2 cup butter
1-1/4 cups sugar
1/4 cup milk
2 eggs
1 tsp. vanilla
1-3/4 cups flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 large can apricots, drained, and chopped

TOPPING:
2 cups flaked coconut
2/3 cup brown sugar
1 tsp. cinnamon
1/3 cup butter

Combine cream cheese, butter, and sugar. Mix at medium speed of an electric mixer until well blended. Gradually add milk, mixing well after each addition. Blend in eggs and vanilla. Add dry ingredients to the cream cheese mixture, mix well.
Blend in the chopped apricots by hand, mixing just til incorporated.
Bake at 350 degrees for 35-40 minutes, or until a wooden pick inserted into cake comes out clean.

For the topping combine the coconut, brown sugar, cinnamon, and butter. Mix well. Spread onto the still hot cake. Broil 3-5 minutes, watching carefully, til topping is golden brown.
