Pastry for 2 crust 8 inch pie
6 medium green tomatoes
1 cup sugar
1/2 tsp. salt
1/2 tsp. cinnamon
2 tbl. flour
1/2 tsp. nutmeg
2 tbl. lemon juice
1 tbl. butter
Preheat oven to 425* Roll out 1/2 of pastry. Place in pie plate.
Core, thinly slice, then quarter tomatoes. You will need 3-4 cups.
Combine sugar, salt, cinnamon, flour and nutmeg. Add to the tomatoes; toss lightly. Add lemon juice.
Turn tomato mixture into pastry lined pie plate; dot with butter. Roll out rest of pastry for top crust. Place on the pie; seal and flute edges. Cut slits in the top crust.
Bake for 40-45 minutes, or until tomatoes are tender.
