Fresh up Fruit Pie

This pie was a prize winner in Pillsburys 19th Annual Bake Off Contest.
1/4 cup butter
1/2 cup flour
2 cups flaked coconut
Filling:
1 cup apricot nectar
1 pkg. orange Jello
1 cup lemon lime soda
1/2 cup whipping cream, whipped
Prepare filling first and chill while preparing the crust.
Melt butter in a skillet over medium heat. Add flour and coconut, stirring constantly, until mixture is lightly browned, about 5-7 minutes. Reserve 1/2 cup as garnish. Using the back of a spoon, press mixture on bottom and sides of a 9 inch pie pan. Cool. Spoon filling into pie shell. Garnish with remaining 1/2 cup coconut mixture. Chill until firm, at least 4 hours.
Garnish with sweetened whipped cream.
Filling:
Heat apricot nectar just to a boil. Add the gelatin and stir to dissolve. Add lemon-lime soda. Chill until thick but not set. Fold in whipped cream.
