Edelweiss Fudge Pie

This pie was a prize winner in Pillsburys 19 Annual Bake-Off Contest.

2 oz. German Sweet Chocolate
1/2 cup butter
3 large eggs
1/2 cup sugar
1/2 cup firmly packed brown sugar
1/2 cup flour
1 tsp. vanilla
1 cup whipping cream

Preheat oven to 350*
In a medium sauce pan over low heat, melt chocolate and butter, stirring constantly just until butter is melted and chocolate is softened. Remove from heat; cool mixture to room temperature. For faster cooling, place in refrigerator, or freezer for a few minutes.
In a large mixer bowl, beat eggs at high speed for 2 minutes, until foamy. Add sugar and brown sugar. Beat at high speed for 1 minute. At low speed, blend in flour for 1 minute. Add cooled chocolate- butter mixture and vanilla. Beat for 1-1/2 minutes at medium speed, until mixture is well combined.
Pour into well greased 9 inch pie pan.
Bake at 325* for 40 minutes. Cool. Pie puffs up when baking then settles down to a nice fudgy goodness. Serve with whipped cream.
