Chocolate Mint Cream Cheese Pie

1 (6 ounce) package chocolate covered creamy mints (JUnior Mints.)
4 (8 ounce) packages cream cheese, softened
3/4 cup white sugar
3 eggs
1 tsp. vanilla extract
2 (8 inch) prepared chocolate graham cracker crusts
Preheat oven to 350 degrees
With an electric mixer beat the cream cheese and sugar until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla. Chop the frozen mints, and pour the filling into the crust
Bake at 350 degrees for 40 to 45 minutes or until just set. Cool on wire rack, then chill for several hours or overnight.
