Baked 8 inch pie shell
1/4 cup cold water
2 egg yolks
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1/4 cup flour
1/4 tsp. salt
1 cup boiling water
1 tbl. butter
1/2 tsp. vanilla
3-4 ripe bananas
1/2 cup heavy cream, whipped
In a saucepan, mix cold water with the egg yolks. Stir in combined sugars,flour and salt. Gradually add the boiling water, stirring briskly. Cook,stirring for 3-5 minutes, or until smooth and thick. Add butter and vanilla;cool 5 minutes, stirring occasionally. Pour into baked pie shell.
Refrigerate until serving time.
