Spiced Peach Jam

1-1/2 pounds fully ripe peaches
2 tbl lemon juice
1/4 tsp ground nutmeg
4-1/4 cups sugar
3/4 cup water
1 box powdered fruit pectin
Cut into halves, pit, peel and grind peaches (about 1-3/4 cups, ground) into a large bowl or pan. Stir in lemon juice and nutmeg;add sugar, mix well and set aside.
Mix water and fruit pectin in a small saucepan. Bring to boiling and boil for one minute, stirring constantly. Stir into fruit mixture.
Continue stirring for about 3 minutes. There will be a few remaining sugar crystals. Ladle jam immediately into hot sterilized jars, filling to within 1/2 inch of the top. Cover immediately with lids, following manufacturer's directions. Let stand at room temperature until the jam is set. Store in the refrigerator if jam is to be used within 2 or 3 weeks, or in the freezer for longer storage.
