Papaya Jam

1 can (20 oz.) crushed pineapple in syrup
2-2/3 cups papaya (about 2 medium), peeled, seeded and sliced
2 cups sugar
1 package (8-serving size) Orange Flavor Gelatin
1-1/3 cups flaked coconut (optional)

Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.

Mix fruit and sugar thoroughly in large saucepan. Bring to boil; reduce heat and simmer 10 minutes. Stir in gelatin and coconut, simmer 10 minutes longer, stirring occasionally. Skim off any foam.

Ladle quickly into prepared jars, filling to within 1/8 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Invert jars 5 minutes, then turn upright. Or follow water bath method recommended by USDA. After jars are cool, check seals. Cool and store in refrigerator.
