Ginger Apple Jam

1 cup finely chopped fresh ginger root
5-6 large apples [tart-sweet, crisp ones ie: Jonagold]
2 cups apple juice [or water if you don't have juice]
6 cups sugar
1 teaspoon powdered ginger
Peel ginger root and chop finely.
Quarter apples, [do not peel] remove core and cut in chunks. Chop finely by hand or in Cuisinart.
Put chopped ginger root, chopped apple, and liquid [juice or water] in large deep casserole or other microwave container. Cook on high in microwave until all tender. [about 40 minutes]
Add sugar and stir in well to dissolve. Cook on high for at least another 20-30 minutes or until jam stage is reached.
Add powdered ginger and stir. Let cool completely. Ladle into containers, seal and store in freezer. Makes about 8 cups. For even more ginger add some chopped candied ginger.
