3-1/2 cups whole wheat flour
8 oz. beef liver
3 eggs
1 tbl safflower oil
Puree beef in a blender until smooth. Add egg and blend for a minute or so.
Put flour in a large mixing bowl and make a well in the center of the flour. Pour liver and egg mixture into the well with the oil. Mix well until thoroughly combined. Turn dough out onto a floured board and knead until smooth and shiny; about 5 minutes.
Wrap dough in plastic and let rest in the refrigerator for at least one hour. Divide dough into 8 equal portions, approximately 4 ounces each.
Form into desired pasta shapes. Cook in boiling water until al dente. Drain noodles and toss with a little oil.
Toss pasta with a little cottage cheese to make a creamy sauce. Add a few pureed veggies, and serve.
